RECIPE: Marble Cake.

Marble Cake.
Marble cake is basically a vanilla cake with a mottled chocolate over lay. It’s easy to make, rich, moist and buttery with chocolate swirls.

INGREDIENTS
  • 3 large eggs
  • Full cream milk
  • Vanilla extract
  • Plain cake flour
  • Granulated sugar
  • Baking powder
  • Unsalted butter
  • Cocoa powder dissolved in boiling water.

DIRECTIONS
  • Grease and Flour a 9 inch loaf pan. In the bowl of your mixer, mix sugar and butter until light and fluffy (you’ll see that the volume increases - so you know you’re on the right path), usually for about 8-10mins.

  • Add the eggs into your fluffy mix, one at a time, whisking after each one - careful not to over mix.
  • Add 1/3 of the flour to the mix, then 1/3 f the milk then mix - repeat process until flour and milk are used up.
  • Then add baking powder and vanilla extract. I like to add the baking powder at the end because one it comes in contact with wet ingredients it is activated so I delay it as late as possible.
  • Split the mixture into 2 depending on how much chocolate you want in your mix. Then add the dissolved cocoa powder to your desired batter.
  • Pour into your greased and floured pan alternating between the two batters. After exhausting the batter, the best part is trying to create swirls using a bread knife, wavy line across the length of the pan and also in the opposite direction.

  • Bake at 180C or 350F degrees for 50 – 55 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan 10 minutes then turn out onto a wire rack till completely cool.
